Panamanian Pork Feet Sao
Ingredients
4 pounds of Pork feet
2 Chombo peppers
2 Cucumbers
2 Onions
5 Cilantro leaves
5 Garlic cloves
6 Lemons
2 tablespoons of Vinegar
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a large pot with boiling water, place the pork feet, salt, garlic, cilantro, and half an onion.
Step 2 : Cook on medium heat for 45 minutes until the pork feet are tender.
Step 3 : While the pork feet cook, chop the onion and chombo peppers into julienne slices, and the cucumbers into rounds.
Step 4 : Once ready, remove the pork feet from the pot, drain, and set aside 2 cups of the broth.
Step 5 : In a large glass container, mix the reserved broth, vinegar, chopped vegetables, and lemon juice.
Step 6 : Add the pork feet, salt, and pepper to taste, cover, and marinate for at least 5 hours.
Step 7 : For intensified flavor, marinate the pork feet overnight.
