Panamanian Mazamorra

Ingredients

2 cups of Old corn kernels

1 cup of Fresh corn kernels

6 cups of Water

2 cups of Sugar

4 Cinnamon sticks

8 Cloves

1 cup of Nance chicha

1 cup of Evaporated milk

½ cup of Coconut milk

Preparation

Step 1 : Carefully wash the old corn, drain it, and toast in a skillet for about 10 minutes until it takes on a dark hue.

Step 2 : Allow to cool and then grind.

Step 3 : In a large pot, combine water, sugar, cinnamon, and cloves, and cook for 5 minutes, stirring constantly until the sugar dissolves completely.

Step 4 : Gradually add the toasted ground corn, avoiding the formation of lumps.

Step 5 : Then, add the fresh corn, evaporated milk, and coconut milk, and cook for 15 minutes.

Step 6 : As it begins to thicken, add the Nance Chicha and a pinch of salt, stir for 2 minutes, and remove from heat.

Step 7 : Serve the mazamorra hot and ready to enjoy.
