Panamanian Empanadas
Ingredients
1 kilogram of Ground beef
3 tablespoons of Oil
½ kilogram of Finely chopped onion
Sweet paprika
100 grams of Finely chopped tomato
½ tablespoon of Salt
25 grams of Finely chopped cilantro
1 pinch of Ground cumin
1 liter of Warm water
1 Beef broth cube
1 tablespoon of Coloring
1 pinch of Salt
2 tablespoons of Softened butter
1 kilogram of Pre-cooked corn flour
2 tablespoons of Yuca starch
1 Egg
10 milliliters of Lemon juice
Oil
Spicy aji and lemon for serving
Preparation
Step 1 : Season the meat with sweet paprika, salt, and spices to taste, then cook in a pot with a little oil for 25 minutes.
Step 2 : Once ready, let it rest and shred it with a fork, set aside.
Step 3 : For the dough, place warm water in a bowl along with yuca starch, coloring, seasoning, broth cube, salt, and butter.
Step 4 : Add corn flour and mix until forming a dough, then knead and add lemon juice.
Step 5 : In a skillet with hot oil, sauté the onion until golden, then add garlic, tomato, sweet paprika, coloring, spices, salt, cilantro, and cumin.
Step 6 : Cook for 15 minutes and add the meat, cooking for another 10 minutes over low heat.
Step 7 : Let it rest.
Step 8 : Form little balls with the dough, flatten to make circles, and in each, add a spoonful of filling.
Step 9 : Fold in half to create a half-moon shape and seal.
Step 10 : Fry the empanadas in a skillet with hot oil on both sides until golden, then remove and drain on absorbent paper.
Step 11 : Finally, serve.
