Panamanian Corn Fritters

Ingredients

1 cup of Wheat flour

8 Sweetcorn cobs (fresh corn)

2 Eggs

1 ½ tablespoon of Sugar

4 tablespoons of Evaporated milk

1 teaspoon of Salt

Preparation

Step 1 : The corn cobs are cleaned and washed thoroughly.

Step 2 : Then, the grains are carefully cut off.

Step 3 : Next, they are crushed in a food processor without overdoing it.

Step 4 : The juice from the crushed grains is separated with a strainer and poured into a bowl.

Step 5 : Subsequently, eggs are added one by one and mixed.

Step 6 : Then, salt, sugar, milk, and flour are gradually incorporated until a homogeneous mixture is achieved.

Step 7 : In a skillet with hot oil, a portion of the mixture is poured in with a large spoon and browned on both sides.

Step 8 : They are removed from the oil and placed on absorbent paper to remove excess oil.

Step 9 : Finally, they are served hot.
