Panamanian Codfish Fritters

Ingredients

2 cups of Wheat flour

500 grams of Codfish

1 Medium onion

½ cup of Chopped parsley, chives, and cilantro

½ Chopped chombo chili

1 tablespoon of Curry

1 tablespoon of Baking powder

½ tablespoon of Achiote powder

1 cup of Water

Frying oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The codfish must be cleaned and left in cold water for about 30 minutes to desalt.

Step 2 : Then, in a saucepan with boiling water, cook it for 30 minutes.

Step 3 : Change the water and continue cooking for another 30 minutes.

Step 4 : Once cooked, remove the water and let it rest until it cools.

Step 5 : Shred the fish.

Step 6 : In a bowl, place the wheat flour, parsley, chives, cilantro, curry, baking powder, onion, pepper, and salt.

Step 7 : Mix all the ingredients and gradually add water to form a batter.

Step 8 : Add achiote for color and chopped chili.

Step 9 : Incorporate the shredded codfish and mix well.

Step 10 : In a pan with hot oil, pour portions of the mixture and fry them.

Step 11 : Flip the fritters for even cooking.

Step 12 : Remove and place on absorbent paper to remove excess fat.

Step 13 : Serve hot.
