2 kilograms of Pork

2 kilograms of Beef

1 kilogram of Bacon

100 grams of Salt

4 tablespoons of Oregano

2 tablespoons of Ground chili

1 tablespoon of Thyme

1 pinch of Black pepper

½ tablespoon of Nutmeg

1 tablespoon of Ground garlic

1 cup of Red wine

Preparation

Step 1 : To prepare the sausages, it is important to start by washing and hydrating the pork intestines and letting them soak in water with vinegar.

Step 2 : Subsequently, inflate them by circulating water inside.

Step 3 : Then, chop the meat and fat and store in the refrigerator.

Step 4 : In a separate bowl, combine the salt with the spices and add the wine, mixing everything and pouring over the chopped meat.

Step 5 : Mix and knead until achieving a homogeneous mixture.

Step 6 : It is essential to keep the meat cold during the process, kneading it for at least one or two minutes.

Step 7 : Once the mixture is ready, proceed to fill the pork intestines with the meat, pressing well and tying them according to the desired size.

Step 8 : To release any trapped air, prick the sausages with a needle.

Step 9 : It is recommended to refrigerate the sausages for a few hours before cooking.

Step 10 : For cooking, grill them over low heat, turning to ensure even cooking.

Step 11 : Once cooked, they are ready to serve.
