Lentil Curry
Ingredients
1 cup of Red lentils
1 Onion
3 Garlic cloves
1 Piece of ginger
2 tablespoons of Curry paste
1 can of Coconut milk
2 Tomatoes
2 cups of Vegetable broth
2 tablespoons of Vegetable oil
Spices
1 pinch of Salt
Preparation
Step 1 : Rinse the red lentils and let them soak for 30 minutes.
Step 2 : In a large pot, heat the vegetable oil and add the chopped onion, cooking until golden.
Step 3 : Then, add the chopped garlic and grated ginger, cooking for a few minutes until fragrant.
Step 4 : Next, add the curry paste and spices to taste, cooking for a few minutes to blend the flavors.
Step 5 : Add the chopped tomatoes and cook until they are soft.
Step 6 : Subsequently, add the drained lentils and vegetable broth to the pot, cooking over low heat until the lentils are tender.
Step 7 : Stir in the coconut milk and cook for a few more minutes.
