Quimbol beans or also known as white beans, are a very popular food in Panama. It is a traditional recipe that provides lots of energy and is enjoyed at any time of the day or during various festivities.

Homemade Quimbol Beans
Ingredients
2 pounds of Quimbol beans
5 Cloves of garlic
2 Bay leaves
1 Thyme sprig
1 Rosemary sprig
1 pound of Chopped chicken
½ tablespoon of Cumin
1 teaspoon of Oregano
1 tablespoon of Oil
1 Onion
6 Tomatoes
1 Sweet chili
1 Bell pepper
2 Sliced carrots
4 Cubed potatoes
½ cup of Chopped cilantro
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Begin by washing the beans and placing them in a pot with enough water, garlic, bay leaves, thyme, and rosemary to cook over high heat.
Step 2 : After 30 minutes of cooking, add the pre-washed chicken to the pot and continue cooking uncovered over low heat for an additional 20 minutes.
Step 3 : Meanwhile, in a large skillet, cook the onion, bell pepper, chili, tomatoes, oil, cumin, oregano, and cilantro over low heat for 10 minutes.
Step 4 : This mixture is then added to the bean pot along with carrots, potatoes, salt, and pepper, and cooked for another 30 minutes.
Step 5 : Once cooking time has elapsed, remove the pot from the heat and let it rest for 5 minutes before serving.
