Escabeche Fish
Ingredients
1 ½ kilogram of Small cojinuas
1 Large white vinegar jar
5 Onions
1 cup of Flour
2 Hot peppers
2 tablespoons of Curry
2 tablespoons of Flour
1 pinch of Salt
1 pinch of Black pepper
2 tablespoons of Mustard
3 Garlic cloves

Preparation
Step 1 : The fish should be cleaned, removing the scales and cutting them horizontally from head to tail.
Step 2 : Then, marinate with curry, mustard, garlic, black pepper, and salt, coat with flour, fry, and set aside.
Step 3 : In a separate skillet, sauté the onions until transparent and set aside.
Step 4 : In the same skillet, add two tablespoons of flour, stir, and add the vinegar, letting it boil over low heat for 5 minutes.
Step 5 : Next, add the hot peppers and onions to the sauce.
Step 6 : Place the fish on a tray and cover with the previously prepared sauce.
