Ingredients

2 pounds of Old corn

½ pound of Grated white cheese

1 pinch of Salt

Preparation

Step 1 : Thoroughly wash the corn before cooking it in a pot with enough water for approximately 1 hour, until it is soft.

Step 2 : Once cooked, remove it from the pot and let it drain in a colander.

Step 3 : Take a cup of the corn water and set aside.

Step 4 : Then, process the corn with a traditional manual mill, gradually adding the cheese and kneading with the reserved water.

Step 5 : When the dough is smooth, form small balls that are then flattened with your hands to make the tortillas.

Step 6 : Cook the tortillas in a skillet over medium heat for 5 minutes on each side.
