Chickpea Puree Salad Sandwich

Ingredients

1 can of Chickpeas

1 Avocado

1 Lemon

¼ Red onion

¼ cup of Cilantro

1 teaspoon of Ground cumin

Slices of whole wheat bread

1 Lettuce leaf

Tomato slices

1 pinch of Salt

1 pinch of Black pepper

Preparation

Step 1 : Drain and rinse the canned chickpeas.

Step 2 : Mash them in a bowl until coarse puree forms.

Step 3 : Cut the avocado in half, remove the pit, and scoop out the pulp, then add it to the chickpeas.

Step 4 : Squeeze lemon juice over the mixture and add red onion, cilantro, cumin, salt, and pepper.

Step 5 : Mix well.

Step 6 : Toast the slices of bread and spread a layer of the mixture on each slice.

Step 7 : Add lettuce and tomato slices.

Step 8 : Assemble the sandwich and serve. Enjoy!
