Carrot Croquettes

Ingredients

2 Grated carrots

1 Chopped onion

2 Chopped garlic cloves

1 cup of Breadcrumbs

½ cup of Grated cheese

2 Eggs

Vegetable oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a skillet, heat a little vegetable oil and add the onion and garlic, cooking until golden.

Step 2 : Next, add the grated carrots and cook for a few minutes until tender.

Step 3 : Remove the mixture from heat and let it cool.

Step 4 : Then, add the breadcrumbs, grated cheese, eggs, salt, and pepper to the mixture.

Step 5 : Mix well until a smooth dough forms.

Step 6 : Shape small croquettes with the dough and place them on a plate.

Step 7 : Refrigerate for at least 30 minutes.

Step 8 : Heat vegetable oil in a skillet and fry the croquettes until golden on both sides.

Step 9 : Once ready, remove from heat and place on paper towels to remove excess oil.
