Ingredients

1 ½ kilogram of Cassava

3 tablespoons of Small oil

1 teaspoon of Salt

¼ cup of Oil

½ Chopped onion

2 Chopped garlic cloves

1 Chopped chili

½ teaspoon of Aji chombo

½ kilogram of Chopped meat

1 tablespoon of Tomato purée

1 pinch of Ground cumin

1 pinch of Salt

Preparation

Step 1 : To prepare this delicious recipe, start by cutting the cassava into pieces and cooking it in boiling water for 20 minutes.

Step 2 : It is important to remove it before it is fully cooked and then pass it through a colander, kneading with salt and oil until achieving a soft, thick consistency.

Step 3 : In another pot with oil, sauté the onion, garlic, and chili.

Step 4 : Next, add the Aji chombo, cumin, and chopped meat to the previous mixture, stirring until the meat is cooked.

Step 5 : Then, add the tomato purée and salt, and turn off the heat.

Step 6 : With the cooked cassava, form small tortillas and place a spoonful of filling in the center.

Step 7 : Carefully close them to form carimañas, repeating this process until all the cassava and filling are used.

Step 8 : Finally, fry the carimañas in hot oil until golden.

Step 9 : Once cooked, it is recommended to pass them through absorbent paper to remove excess oil before serving.
